Seasonal Honey

SPRING

This light golden honey is sweet and fragrant with a floral taste and a subtle mint undertone. Spring honey is foraged from flowers and trees such as dandelions, clover, maples, black locust, and other spring wildflowers as well as the nearby garden beds. The overall flavor is delicate and refreshing.

SUMMER

This midseason amber honey is harvested in summer, while forage is transitioning from spring blooms to fall blooms. This honey captures the sweetness of spring honey and some of the darker qualities of late summer honey.

LATE SUMMER

This darker golden honey is delicious and full of flavor. Late summer honey is darker with a deeper, more robust flavor as a result of the honeybees foraging late summer/early autumn flowers and trees such as aster, tulip poplar, goldenrod and Japanese knotweed. This honey has a rich, slightly fruity flavor with subtle herbal undertones. The sweetness is well-balanced with the other flavors, creating a pleasant complexity.
